Last week, as his fellow White House chefs were madly preparing an autumn feast for Thursday's State Dinner, Senior Policy Advisor for Healthy Food Initiatives Sam Kass was on a three-day policy road trip along the East Coast. On Day 2 in New York, Kass spoke to leaders in the sustainable food movement at the James Beard Foundation's second annual national food policy conference, “Sustainability on the Table: How Money and Media Influence the Way America Eats.” (Above, Kass during his remarks)
Kass' talk was titled "The Ingredients of Change," and he discussed First Lady Obama's Let's Move! campaign in depth.
"This set of problems offers us a huge set of opportunities," Kass said about the challenges of combating the high US rate of obesity.
After his remarks, Kass took questions from the audience, also included in the video. He comes in at the 8:19 mark; JBF President Susan Ungaro introduces him.
